Apple Pecan Dumplings
ingredients pastry for 3 pies:
- 2 Oranges
- 1/2 cup Light Brown Sugar( packed)
- 3/4 cup sugar, divided
- 1 Tbsp. All purpose flour
- 4 Medium cooking apples
- 1/2 Tsp. Cinnanmon
- 2 to 3 Tbsp. cold butter
- 2 Tbsp. broken Pecans
Grate 2 Tbsp. orange peel; squeeze orange juic, measure and add water to
make 1 cup.In saucepan, mix 1/2 cup of each sugar with flour; add grated
orange peel and juice. Cook and stir until mixture thickens and clears,
about 3 minutes.
Pare, core and cut apples, into 3 horizontal slices. Mix 1/4 cup
sugar and cinnamon; cut cold butter into 6 pieces.Roll pastry 1/8 inch
thick;cut into six 7 inch squares. Place 1 apple slice on each; sprinkle
1 tsp. cinnamon sugar. Top with second apple slice; press 1 piece butter
into centerof apples; sprinkle with cinnamon sugar.
Brush pastry edges with water; wrap around apples; pinch to seal. Place
dumplings in 13x9 inch baking dish. Bake in 400 degree oven for 10
minutes. Reduce oven tempature to 325 degrees.
Spoon some orange sauce over dumplings; bake 10 mintues. Spoon over more
sauce ; bake 10 minutes. Repeat, sprinkling with pecans; bake 15 minutes.

Blue Bayou Monte Cristo Sandwich
, serves 4, preparation time 25 minutes
ingredients:
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1 tablespoon baking powder
- 1 egg
--- sandwich
- 4 ounces turkey breast slices
- 4 ounces Swiss cheese
- 4 ounces ham
- 8 slices egg bread
sift flour, salt and baking powder together. add water to beaten egg, then add to flour mixture and mix well.
set aside.
make a sandwich using turkey first, then swiss cheese, and then ham. cut sandwich into quarters using toothpicks to hold
sandwich together. dip sandwich in egg batter and fry in 360 degrees oil until golden brown. remove toothpicks
and sprinkle with powdered sugar. serve with raspberry jelly.

Bourbon Cherry Salad
ingredients:
- 1 pkg. black cherry gelatin
- 1 c. hot water
- 3/4 c. cherry juice
- 1/4 c. bourbon
- 1 c. black seedless cherries
- Juice of 1 lemon
- mini. marshmallows
- chopped nuts
Pour water over gelatin. Stir until dissolved; add all liquids.
Refrigerate until gelled. Add marshmallows and nuts. Try to sink the
marshmallows. Refrigerate until set.
I would love to share a recipe with you for a salad that my family
enjoys every year for Christmas dinner. It has been a tradition at my
house for as long as I can remember.

Broccoli Salad
ingredients:
- 2 bunches of broccoli
- 1 C raisins
- 1 C sunflower seeds
- 10 slices of bacon, fried drained and Crumbled.
Dressing:
- 6 T sugar
- 2 T vinegar
- 1 C mayonnaise
Wash broccoli and separate into flowerets. Toss broccoli together with bacon, seeds and raisins in a large bowl. Just before serving, mix dressing ingredients together in a
small bowl, pour over the salad and toss.
Best if served immediately.

BUTTERMILK CUSTARD
ingredients:
- 1 pie shell
- 3 egg yolks
- 1 cup of sugar (or less depending on your sweet tooth)
- 1/2 teaspoon vanilla
- 1 cup of buttermilk (a little more if your pie shell looks very empty)
Mix all well, pour into the pie shell, and bake at 300 degrees F. for 30
minutes or until firm half way to the center. Cover with the meringue,
sealing the meringue to the edges of the crust, and bake a little longer
until the meringue is lightly browned (about 10 minutes)
Meringue Topping: beat 3 egg whites at high speed until stiff,
adding slowly 3 tablespoons of sugar and 1/4 teaspoon cream of tartar.
Low fat version of above:
Use 3/4 cup of egg substitute such as Egg Beaters and serve with low-fat
non-dairy topping such as Cool Whip Lite. A meringue has no fat, of
course, but if you are using egg substitutes you may not have eggs from
which to get whites.

Buttermilk Waffles
ingredients:
- 1 c. whole wheat flour
- 1/2 c. rolled oats
- 1/4 c. cornmeal
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 c. buttermilk
- 1/3 c. salad oil
- 2 eggs
Heat waffle iron. Stir together dry ingredients. Make a well in the
center of the bowl. Put the eggs and oil in the well & beat them a
little with a fork. Add buttermilk. Stir until batter is well-blended.
Allow batter to sit a few minutes and start rising. Spoon into waffle
iron. My iron cooks them in about 1.5 minutes. This recipe always makes
delicious, fluffy waffles despite being all whole-grain flour. I am
sure they are very good for you, especially topped with lots of syrup.

Cannellini Bean Pasta
serves 8, preparation time 25 minutes, categories Pasta
ingredients:
- 1 pound elbow macaroni
- 1 can cannellini beans -- pureed
- 1 tablespoon garlic -- minced
- 1/2 cup grated fresh Parmesan cheese
- 8 ounces tomato sauce
- 1/4 pound pepperoni slices
- salt and pepper -- to taste
- 1/2 cup water -- if needed
cook pasta according to directions
while the pasta is cooking, puree the drained beans in a food processor.
Put them in a saucepan and add the tomato sauce, garlic, salt and pepper and the pepperoni slices.
Bring to a low simmer. Cook for about ten minutes. After ten minutes, add the cheese and mix well.
Drain pasta and combine with the sauce and enjoy!
You can leave out the pepperoni to bring the fat content down to 2,7 grams

Cherry Scotch Pancakes
serves 6
ingredients:
- 230 g self raising flour(80 oz)
- 1 tablespoon baking powder
- 1 tablespoon caster sugar
- a large pinch grated nutmeg
- 2 eggs
- 200 ml milk(7fl oz)
- 85 g chopped French glace cherries(3oz)
- 1 tablespoon oil
- 85 g French flace cherries cherries
- 200 ml creme fraiche
Sift the dry ingredients together in a bowl. Whisk in the eggs and milk, continue whisking until smooth. Stir in the cherries.Heat a griddle or heavy frying pan and smear with a little oil. Drop in several tablespoons af the mixture. When bubbles rise to the surface and the undersides are golden, turn over an cook the other side. Wrap in a clean, dry tea towel or arrange on a plate coveered with buttered foil and keep warm in a low oven. Stir together the cherries and creme fraiche. Serve the pancakes warm with the topping.
Chicken and Coconut Soup
serves 4
ingredients:
- 4 spring onions
- 2 cloves of garlic
- 1 green chilli
- grated lemon rind
- 1 tablespoon vegetable oil
- 30 g creamed coconut (1oz)
- 850 ml water (12oz)
- 340 g chicken (12oz)(diced cooked)
- lemon juice
- salt
- 1 Prise Ingwerpulver
Finely chop the onions, garlic and green chili. Stir-fry this mixture and the lemon rind in the vegetable oil until softened.Gradually stir together creamed coconut with the water. Pour this liquid into the pan with the chicken and bring to the boil. Cover and simmer for about 10 minutes, stirring occasionally. Season with lemon juice and a little salt.
Chopped Steak Special
Ingredients
- 1 1/2 Lbs. ground sirlion
- 3 Tbsp. grated or minced onion
- 1 Tbsp. Minced chili pepper
- 1 Tsp. salt
- 1 Tsp. spicy steak sauce or Worcestershire sauce
- 1/4 Tsp green or red tabasco sauce
Combine all ingredients untill well mixed. Shape into four fat ovals
patties. Pan broil in ah eavy skillet: broil 3 to 5 inches from heat, or
grill over medium coals. Cook 5 to 7 minutes per side or to desired
doneness

Duggers Hoppin John (Savannah Style Recipe Book)
ingredients:
- 1 and one half cup dried cow peas, soaked overnight
- 1 cup celery, chopped
- 2 medium onions, chopped
- three quarter pound hog lowl, chopped very fine
- Rice
Combine all ingredients except rice in a heavy pot and cook in plenty of
water until the peas are done, approximately 2-3 hours.
Fold in raw rice, the amount depending on amount of liquid in the pot. (Use 1
cup rice to 2 cups liquid). Cook until rice is done.

Hot Curried Georgia Peaches (Serves 8-10, 2 per person)
2(28 ounce) jars of spiced or pickled peaches
one fourth cup butter melted
three quarter cup light brown sugar
2 tablespoons cornstarch
1 and one half teaspoons curry powder
Drain peaches and place in a greased, 2 quart casserole. Blend melted butter
with sugar, cornstarch, and curry powder. Pour the butter-sugar mixture over
peaches. Bake at 350 deg F for 40 minutes.

Lemon Chicken
I have a recipe for lemon chicken which really nice
and very very simple
first peel and par boil enough potatoes for the family
put in a large roasting pan
add chicken portions - enough again for the family
then pour a liberal quantity of olive oil over the chicken and potatoes,
a liberal quantity of lemon juice over chicken and potatoes,add
salt, pepper and a sprinkling of herbs.
Then add boiling water to the bottom of the pan - till it reached about 1inch.
Put in to the oven and roast until the chicken is golden brown and the potatoes are also brown, turn the potatoes when brown on one side.
Baste the chicken and potatoes with the juice from the pan during cooking.
When cooked remove potatoes and chicken.
Add hot water to the juices in the pan and boil to incorporate all the good bits.

One Pan Dinner No 1
ingredients:
- 6-8 center cut pork chops (bonless is always better)
- 1/2 C. Honey
- 2 16 oz. jars of Salsa (careful, salsa gets hotter as you simmer it)
In a fry pan, Brown chops in a tablespoon of oil, or use cooking spray, this
option is healthier
drain, add honey and salsa to chops and simmer until tender, THATS IT!!!!!!!
Serve over Rice or Egg noodles

One Pan Dinner No 2
EASY POT ROAST
( and I do mean POT! )
ingredients:
- Chuck Roast
- 2 cans of cream of mushroom soup
- 2 cans of water (use the soup cans)
- 2 envelopes of onion soup mix
- Potatoes
- Carrots
In a fry pan, Brown a chuck roast on both sides in about a tbs. on oil,
place in a 6qt. pot, add 2 cans of Cream of mushroom soup/ 2 (soup)cans of
water, 2 envelopes of oinion soup mix, this makes an unbelievable gravy
without hassle, and cook on medium heat (stovetop) for about 1 1/2 hrs.
until tender. Add carrots and cubed potatoes about 1/2 before cooking time
is done. This recipe can also be made in a crock pot to reduce the summer
heat in your kitchen, and is very convenient when you cant whatch a pot on
the stove! ( When using the crock pot method, I usually add potatoes and
carrots at the same time as the other ingredients to ensure they are tender)

Pesto Pasta
serves 4
ingredients:
- 350 g pasta (12oz)
- 1 tablespoon oil
- 1 chopped onion
- 100 g oyster mushrooms (4oz)
- 300 ml double cream (1/2pt)
- 3 tablespoons pesto
- 225 g cherry tomatoes (8oz)
- salt and pepper
- grated parmesan cheese
- fresh basil

Cook the pasta in plenty of lightly salted boiling water. Meanwhile, heat the oil and fry the onion until soft. Add the mushrooms and cook for 3-4 minutes. Pour over the double cream and add the pesto. Stir well and bring slowly to the boil. Add cherry tomatoes and seasoning. Simmer gently to warm through. Return the drained pasta to the pan and pour over the sauce. Serve immediately with plenty of black pepper and grated parmesan cheese. Garnish with sprigs of fresh basil.
Red Hot Poker Potatoes
Ingredients:
- 4 Medium baking potatoes
- 4 long, thin red or green chili peppers
- salt
- Vegetable oil
- Melyed butter, opitional
- Cracked pepper
Scrub and dry potatoes.Using and apple corer, make a hole lenth-wise
through center of each potato. Sprinkle salt into the hole.
Wash and dry peppers, push on into each potato. Coat potati skins with
oil.
Bake in a 350 degreee oven for 1 1/2 hours or untill done.
To serve break open potato and serve with melted butter and cracked
pepper

Roman Pasta
, serves 8, preparation time 45 minutes, categories: pasta, seafood
ingredients:
- 10 ounces mushroom -- sliced
- 1 can whole tomatoes
- 1 tablespoon anchovy paste
- 2 ounces butter
- 1 can tuna in oil -- drained
- 1 can black olives -- sliced
- 4 cloves garlic -- chopped
- 1 pound angel hair pasta
- 2 tablespoons olive oil
- parsley
mix anchovy paste into softened butter and set aside.
cook pasta according to directions.
In a hot pan, add oil and saute the mushrooms until they are softened, remove from the pan and add the
tomatoes and the garlic. Cook for 10 minutes until sauce is thickened. Add tuna and flake mix well. When
ready to serve, mix in mushrooms, olives and top the pasta with some of the sauce. Top with parsley.

SAUCY TWIST PORK DISH
Hi, I'm not exactly a big Spam lover, or Spam liker for that matter, but this recipe is easy and delicious.
ingredients:
- 4 oz. cork screw macaroni
- 1/2 C. chopped onion
- 1/3 C. chopped green pepper
- 1 T. butter
- 1 can Spam, cubed
- 1 can Cream of Mushroom Soup
- 1/2 C. catsup
- 1/3 C. Shredded cheddar cheese
Heat oven to 400 degrees. Cook macaroni as directed on package.
Drain. In large skillet, cook & stir onion & green pepper in butter until tender.
Stir in macaroni and remaining ingredients. Pour into ungreased 1 1/2 qt. casserole dish.
Cover and bake 30 minutes. This is a good quicky dinner to make. Ingredients can be flexible,
depending how much you like cheddar cheese, onions or peppers. We usually use three cups
of macaroni.

- 2 tablespoons paprika
- 1 tablespoon dried oregano

- 1 tablespoon garlic powder
- 1 teaspoon crushed red pepper
- 1 tablespoon salt
- 1 teaspoon black pepper
combine all ingredients thorougly

ingredients:
- 2 teaspoons cumin -- amber
- 2 teaspoons cumin -- white
- 1 teaspoon cumin -- black
- 2 tablespoons chili powder
- 2 tablespoons paprika
- 1 tablespoon ground coriander
- 1 tablespoon garlic powder
- 1 tablespoon salt
- 1 teaspoon crushed red pepper
- 1 teaspoon dried oregano
In a small mixing bowl, combine all the ingredients together.
Mix thoroughly. This spice mixture should be stored in an air-tight container for up to 6 months yeild 1/2 cup.
Spicy Wonderful Meatload
, serves 8, prepartation time 2 hours
ingredients:
- 1 1/2 pounds ground beef, extra lean
- 1/2 cup bread crumbs, seasoned
- 2 large eggs
- 3 tablespoons essence (Emeril's Creole Seasoning - Bayou Blast)
- salt and pepper
- 1/2 cup parmesan cheese -- grated
mix meat, eggs, bread crumbs, cheese and essence together. Add salt and pepper to taste.
Place in glass loaf pan and bake at 350 degrees for 1 and a half hours.
if you don't want so much of a bite, lesson the essence accordingly.

Texas Beef on Texas Toast
Ingredients:
- 1 red or green sweet pepper
- 1 ripe tomato
- 2 Tbsp. olive -oil
- 1 tsp. dijion-style mustard
- 1 Tbsp. chopped parsley, optional
- 3 to 4 Tbsp. soft butter
- 1 small clove garlic pressed
- Dash cayenne
- 8 thick slices of bread ( french) is great
- 1 to 1 1/4 lbs. sliced cooked roast beef or sandwich steaks
Chop or slice pepper into big pieces. Slice tomato. Quickly cook pepper
and tomato slices in olive oil; stir in mustard and parsley.
Combine butter, garlic and cayenne: spread on bread. Grill or broil
bread.
Put sliced roast beef on top of grilled bread; spoon pepper mixture over
meat. Top with second slice of toast. If using sandwich steaks, grill or
saute` in butter before making sandwiches
