BANANA NUT LAYER CAKE

Cream the sugar and shortening. Add eggs. Mix dissolved soda and water into the mashed bananas. Add to the sugar and egg mixture. Mix in flour and vanilla. Stir in nuts. Bake in 3 8" or 9" cake pans (Either spray pans with "Pam" or grease and flour.) at 375 F. degrees for about 25 minutes or just until cake first begins to pull away from the sides of the pan. Cool on cake racks. Assemble with the apple/lemon/coconut filling below.
APPLE-LEMON-COCONUT FILLING Mix all above in a food processor until smooth. Make sure there are no large pieces of lemon rind. Add 2 cups of grated coconut (fresh, canned, or frozen). Add 2 eggs. In a heavy bottom pan, boil until thick--just a few minutes--stirring to prevent scorching.
Spread between layers and on top. Enjoy!

Fantasy-Cake
The cake was simply made by baking a yellow "box" cake - let it cool.
Then poke holes on the top about 1 to 2 inches deep. Make any red jello and right away before it sets up, pour it over the top of the cake - getting it in the holes.
Make a vanilla pudding mix according to the instructions. Let it firm up.
Put on top of cake and top it with whip cream. If you want to garnish the cake: put nuts or cherries on top of that.
