- 2 teaspoons of baking soda dissolved in 4 tablespoons of hot water
- 5 very ripe bananas, mashed
- 3 cups sifted flour
- 2 teaspoons vanilla
- 1 cup chopped nuts (mix with a couple of tablespoons of the flour to

into the mashed bananas. Add to the sugar and egg mixture. Mix in flour
and vanilla. Stir in nuts. Bake in 3 8" or 9" cake pans (Either spray

the pan. Cool on cake racks. Assemble with the apple/lemon/coconut

APPLE-LEMON-COCONUT FILLING
- 2 apples (with cores and peels removed) roughly chopped
- 2 lemons (with seeds removed) roughly chopped with rind

Mix all above in a food processor until smooth. Make sure there are no
large pieces of lemon rind.
Add 2 cups of grated coconut (fresh, canned, or frozen).

Fantasy-Cake
The cake was simply made by baking a yellow "box" cake - let it cool.
Then poke holes on the top about 1 to 2 inches deep. Make any red jello
and right away before it sets up, pour it over the top of the cake -
getting it in the holes.
Make a vanilla pudding mix according to the
instructions. Let it firm up.
Put on top of cake and top it with whip
cream. If you want to garnish the cake: put nuts or cherries on top of
that.
